History & Origin

Developed in the 1960s at the University of Massachusetts Waltham Field Station by breeder Bob Young. Waltham Butternut won the prestigious All-America Selections award in 1970 and quickly became the most widely grown butternut variety in North America. Its uniform bell shape, smooth tan skin, and small seed cavity set the standard that all other butternuts are measured against. A true heirloom that has stood the test of time.

In the Kitchen

The quintessential soup squash, peel, cube, and simmer with aromatics for a velvety butternut soup. Equally excellent roasted with olive oil and sage, pureed into risotto, or used as ravioli filling. Stores 3,6 months in a cool, dry place, developing sweeter flavor over time. The dense, fine-grained flesh holds its shape beautifully when roasted or cubed into stews.
