History & Origin
Known as "calabaza" throughout the Caribbean, this tropical pumpkin has been a dietary staple in Jamaica, Cuba, Puerto Rico, and across Latin America for centuries. Its mottled green-and-orange skin hides dense, sweet flesh that is the foundation of Caribbean soups, stews, and rice dishes. Uniquely heat-tolerant, it thrives in Kansas summers where cooler-season squash may struggle.
In the Kitchen
Essential for traditional Caribbean pumpkin soup, simmer cubed flesh with coconut milk, Scotch bonnet pepper, thyme, and allspice. Also excellent in rice and peas, curries, and empanadas. The firm flesh holds its shape beautifully in stews and braises.
