History & Origin
Honeynut was developed by Cornell University vegetable breeder Michael Mazourek as a mini butternut with dramatically higher sweetness and nutrition. It is a cross between butternut squash and a wild Cucurbita moschata, resulting in a personal-sized squash with deep orange flesh that is significantly sweeter than standard butternut. Its compact size makes it perfect for small households and single-serving recipes.
In the Kitchen
Simply halve, scoop seeds, and roast at 400°F for 25 minutes, no peeling needed. The skin is thin enough to eat. Stuff with grains, cheese, and herbs for an elegant dinner. Honeynut is also exceptional pureed into soups, mashed as a side, or cubed into grain bowls.
