Yuxi Jiang Bing Gua is a squash with two personalities. Around the city of Yuxi in China's southwestern Yunnan province, it is picked young and dark green and cooked like a summer squash: tender, nutty, buttery. Let the same fruit ride the vine to full maturity and the rind mottles toward black and orange, the flesh deepens to carotene orange, and the flavor lands somewhere between roasted chestnut and a sweet butternut. Why this squash

• Vine borer resistant: a true Cucurbita moschata, with the dense, solid stems squash vine borers rarely get through
• Chestnut flavor, silky texture: widely regarded as one of the most refined eating squash you can grow, sweet without being sugary
• Summer squash or winter squash: harvest young at about 70 days for tender green fruit, or let it mature for the pantry
• Flattened, ribbed fruit: drum-shaped and deeply lobed, with growers reporting 3 to 8 pounds at full maturity
• Open-pollinated heirloom: save seed from your best fruit and it grows true next year

About 100 to 115 days to full winter-squash maturity, or roughly 70 days for the summer-squash harvest. In a Kansas season that is comfortable from a May sowing, and the young-fruit option means you are eating from this vine long before frost is a worry.
